Is Wild Fork Foods Meat Sustainable? Because Wild Fork Foods sources meat from hundreds of farms, it does not have a single sustainability standard. While some meat may be sourced from sustainably run farms, most of it comes from conventional beef, pork, and poultry operations.

Meet Elliot Nelson

Elliot Nelson, the company's founder and CEO, went to the University of Notre Dame for college. During his junior year he left South Bend to study abroad in Dublin, Ireland.

The venture was started in 2004 by principal owner Elliot Nelson, with the opening of James E. McNellie's Public House in downtown Tulsa, Oklahoma. The McNellie's Group portfolio includes McNellie's, El Guapo's Cantina, Yokozuna, Dust Bowl Lanes & Lounge, Dilly Diner, The Tavern, Fassler Hall, & Elgin Park.

Elote is owned and operated by Libby Billings a Tulsa native, Booker T. Washington alumni & OSU IT Culinary School graduate. Billings has no investors and is proud to be a role model for other women and girls who want to follow their entrepreneurial dreams.
